Peanut Butter Squares
- 3 cups whole-wheat flour
- 1-cup wheat germ
- 2 tablespoons baking powder
- 1/2 teaspoon salt
- 2 cups peanut butter, chunky or creamy (use 100% peanut butter without sugar, salt, or hydrogenated oils)
- 1 ½ cups milk
Heat oven to 400 ° and grease 1 or 2 baking sheets. Combine whole-wheat flour and wheat germ, baking powder, and salt in a mixing bowl. Blend peanut butter and milk in a blender. Add liquid to the fl our mixture. The dough will be soft. Roll dough out on lightly fl oured surface until it is about ½ inch thick and cut into 2 inch squares. Put biscuits on baking sheets about 1 ½ inches apart from each other. Bake for about 15 minutes, or until slightly browned. Put cooled biscuits away, wrapped well, in freezer or refrigerator.
Makes about 36 biscuits.
