Soft Banana Strips
- 1 egg
- 1/3 cup milk
- 1 cup quick-cooking oats
- 1/2 banana
- 1/2 cup flour (white or whole wheat)
- 1/8 cup rice
Squash bananas, and beat the egg. Mix all ingredients, then spread evenly on a plate. Next, heat in microwave for 3 1/2 minutes. When done, let cool, then cut and serve. The rice can be pre-cooked or uncooked for extra crunch!
Carob Crunchies
For crunchies:
- 2 1/4 cups whole wheat flour
- 1 egg
- 1/4 cup vegetable oil
- 1/4 cup applesauce
- 1/2 cup HOT water
- 1 tbsp. honey
- 1 tsp. molasses
For icing:
- 1 cup carob chips
Mix all of the crunchies' ingredients together until well blended. Knead dough two minutes on a lightly floured surface. Roll to 1/4" thickness. Cut out and bake on an ungrased cookie sheet for 30 minutes in a 300 degree F oven. Cool.
For icing, melt carob chips in microwave or saucepan. Dip cooled crunchies in carob, or lay them on a flat surface and brush melted carob over the biscuits with a pastry brush. Let cool.
Banana Pupcakes
- 2 cups water
- 2 bananas
- 1 tsp. vanilla
- 3 cups flour (white or whole wheat)
- 1 tbsp. baking powder
- 1 egg
- 3 tbsp. honey
Heat oven to 350 ° F.
Mash bananas in a large bowl. Mix in all the rest of the ingredients until well blended, and then pour into cupcake pans. Bake 20 minutes.
These are great for birthdays! Some carob chips can be melted and used for "frosting."
Feel free to add other ingredients such as suflower seeds (without the shell), nuts, carob chips, shredded carrot, or diced apple. Crucnhy peanut butter can be used instead of smooth. Whole wheat flour is always better than white. Extra treats or double batches can be frozen for future use.
